Watermelon cooler

You don’t need a juicer or blender to make this tasty watermelon drink. Make it a few hours in advance as it’s best served chilled.

Ingredients

  • 550g/1lb 4oz watermelon, peeled, chopped
  • ¼ lemon, juice only
  • fresh mint leaves, to serve

Method

  1. Mash the watermelon in a bowl, then stir in the lemon juice.
  2. Sieve the watermelon into a jug and press down gently on the pulp to extract all the juice.
  3. Pour the juice into glasses filled with ice and garnish with the mint.
